Instructions

Step 1
In a large pot, heat olive oil over medium heat.
Step 2
Add chopped onion, garlic, carrot, and celery, and sauté for 5 minutes until softened.

Stir in cumin and coriander, cooking for 1 minute until fragrant.
Step 4
Add lentils and vegetable stock, then bring to a boil.
Step 5
Reduce heat and simmer for 25 minutes, or until lentils are tender.
Step 6
Stir in spinach until wilted, then season with salt and black pepper.
Step 7
Serve hot with a drizzle of olive oil.
