Step 1
Dice the banana into small, uniform cubes

In a skillet, melt a generous knob of butter, fry the onions until they are transparent, then fry the banana cubes until they are golden and slightly caramelized

Add the Panko breadcrumbs to the same pan

Stir constantly over medium heat until the Panko is golden brown and has absorbed the banana-infused butter
Step 5
Season with a pinch of salt, black pepper and add the parsley. Remove from the heat and set aside in a bowl. Do not leave it in the hot pan or it will burn
