Ingredients
4 servings
3boneless skinless chicken breasts
salt
black pepper
1 tspdried oregano
½ tsppaprika
2 Tbspolive oil
4cloves garlic
minced
1zest of lemon
¼ cupfresh lemon juice
¼ cupchicken broth
¼ cupheavy whipping cream
¼ cupgrated parmesan
optional but excellent
1 Tbspbutter
optional
Spinach
Optional veggies
Green beans
Zucchini
Cherry tomatoes
Instructions
Step 1
Pound breasts to even thickness. Season with salt, pepper, oregano, and paprika.
Step 2
Heat olive oil in a large skillet over medium-high. Cook chicken 4-5 minutes per side until golden. Remove and set aside.
Step 3
Lower heat to medium. Add garlic, cook 30 seconds. Add lemon zest and juice, simmer 1 minute. Pour in broth, reduce slightly (2-3 minutes).
Step 4
Stir in heavy whipping cream, add parmesan if using, and simmer gently 3-5 minutes until slightly thickened. Taste and adjust salt/lemon.
Step 5
Finish by adding any optional veggies, and cook in the same pan.
