Ingredients

1 Tbspolive oil
3 ouncesshiitake mushrooms
2 packagesenoki mushrooms
16 ounceswhite button mushrooms
16 ouncescremini mushrooms
3 ouncesoyster mushrooms
olive oil

Instructions
Step 1
Remove the base of the shiitake mushroom stems.
Step 2
Cut decorative slashes across the tops of the mushroom caps.
Step 3
Cut all the mushrooms into bite-size pieces and split the clumps of smaller mushrooms.
Step 4
In a small bowl, whisk together all ingredients for the sauce and set aside.
Step 5
Heat a tablespoon of olive oil in a large sauté pan.
Step 6
When hot, add all mushrooms except the enoki.
Step 7
Season with salt and pepper and sauté until cooked through.
Step 8
Add enoki mushrooms and quickly toss.
Step 9
Turn off heat and add sauce.
Step 10
Toss until all mushrooms are covered with the sauce.
Step 11
Plate and garnish with chives.
