Step 1
Drain and rinse all canned items. In an oven safe pot, put in ingredients in this order. Rice, rotel, black beans, kidney beans, chickpeas, corn, spices, 2 cups of water.
Step 2
Cover with tin foil and lid. Place in a 350 degree oven for 45 minutes. Open, stir everything together, recover and put back in oven for 10-15 minutes or until Rice has absorbed all liquied.
Step 3
Eat in a bowl or in a wrap. With or without cheese, or any other of your favorite toppings.
