Ingredients
6 servings
2 lbsstew beef
cubed
¼ cupflour
1 containermushrooms
chopped
2onions
chopped
2celery
chopped
1red pepper
chopped
6 clovesgarlic
chopped
1 bagpotatoes
quartered small
2carrots
diced
1 packagegreen beans
quartered
½ tspthyme
crushed
¼ tspcayenne pepper
1 canGuinness beer
2 tspworcestershire sauce
1 containerlow sodium beef stock
2bay leaves
Instructions
Step 1
Dice beef into small cubes. Add salt and pepper. Toss in flour. Heat Dutch Oven on high. Preheat oven at 325 degrees. Brown beef in olive oil (about 6-8 minutes). Work in batches if need be.
Step 2
Remove beef and set aside. Add onions, celery, mushrooms, and red pepper. Cook for 6 minutes.
Step 3
Add seasonings. Deglaze with beer. Add Worcestershire sauce and beef stock. Add potatoes, carrots, and green beans. Bring to a boil then cover and place in oven for 2 hours.
