1 cupCherry Tomatoes

1can Artichoke Hearts
quartered or halved
½ cupBlack Olives
pitted and sliced
1lemon
juice and zest of
⅓ cupfresh Parsley

Instructions
Step 1
Cook the pasta: Cook the pasta according to package directions until al dente. Drain and set aside.
Step 2
Sauté the vegetables: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Add the tomatoes and cook until they begin to break down and release juices, 1 to 2 minutes.
Step 3
Combine ingredients: Add the cooked pasta to the skillet and toss to coat with the oil and juices. Stir in the artichoke hearts and black olives.
Step 4
Finish the dish: Drizzle the lemon juice and add the lemon zest over the pasta. Stir in the fresh parsley, basil, salt, pepper, and crushed red pepper flakes if using. Mix well and sauté for a few more minutes until all ingredients are warmed through.
Step 5
Serve: Serve immediately, topped with grated Parmesan cheese if desired.
