I usually make this in my trusty old No. 6 cast iron pan. It is 9 3/8". You could make this on a baking sheet lined with parchment. Just pile berries in center of dough circle, leave a 2 inch border and fold edges over berries

Instructions

Step 1
Toss strawberries with the sugar, vanilla and cornstarch
Step 2
Place your pie crust in cast iron pan, pour strawberry mixture on top and fold edges over berries.
Step 3
Beat egg and using a pastry brush, brush the exposed pastry edge with beaten egg.
Step 4
If using sprinkle some demerara sugar on top of berries and crust.
Step 5
Bake 30 to 35 mns until crust is nicely browned.
Step 6
Serve warm or at room temperature.
