Carrots

3 Tbspolive oil
2 Tbsphoney
½ tspAleppo pepper

½ tsppaprika

Instructions
Step 1
If using regular carrots, use 6-8 carrots. No need to peel them, but you can cut them in half to make them smaller. if desired
Step 2
Preheat oven to 400F. In a large bowl, toss the carrots in the seasoning mixture. I like to use mv hands to coat the carrots well. Transfer to a baking sheet and roast for 20-25 minutes. until fork tender, tossing halfwav through.
Step 3
While the carrots are in the oven, make the whipped feta dip. In a food processor, add the feta. yogurt, olive oil, lemon juice and garlic. Process unti smooth. For a thinner consistency, add a little more yogurt or a few tablespoons water. Once done, spread the whipped feta on a plate. Add the roasted carrots on top. Garnish with chopped parsley, a drizzle of olive oil, aleppo pepper and pomegranate arils (optional)
