Instructions

Step 1
Preheat oven to 375 °F (190 °C).
Step 2
In a bowl, mix rice/quinoa, beans, tomatoes, onion, cumin, salt, and pepper.
Step 3
Spoon mixture into halved peppers and top with cheese if using.
Step 4
Place in a baking dish with a splash of water at the bottom.
Step 5
Cover with foil and bake for 25–30 minutes.
Step 6
Remove the foil and bake for an additional 5–10 minutes.
Step 7
Garnish with parsley.
