Step 1
Sauté: In a medium saucepan, melt butter over medium heat. Sauté the onion, bell pepper, and garlic until soft (about 4 minutes).

Melt: Lower the heat to medium-low. Stir in the heavy cream. Once simmering, gradually whisk in the Monterey Jack cheese until smooth and bubbly.

Combine: Fold in the diced blackened chicken and cayenne pepper. The spices from the chicken will tint the cheese sauce.

Serve: Transfer the mixture to a warm skillet or bowl. Serve immediately with the crunchy garlic bread slices for dipping.
