Ingredients

2 cupsalmond flour
⅓ cupcoconut flour
½ cuperythritol
1 Tbspbaking powder
½ tspsalt
4eggs
large
½ cupunsalted butter
melted
½ cupheavy whipping cream
1 Tbspvanilla
Cinnamon Swirl
Optional Glaze
Instructions
Step 1
Pre-heat oven to 350°F. Line a 9 x 9-inch baking dish with parchment paper or grease it.
Step 2
In a large mixing bowl, whisk together the dry ingredients.
Step 3
In a separate smaller bowl, whisk together the cream, eggs, vanilla & melted butter. Whisk vigorously when adding the hot butter to maintain a creamy texture.
Step 4
Add the wet ingredients into the dry and stir until combined and a batter forms. Pour batter into the lined baking dish and spread evenly.
Step 5
Cinnamon Swirl - In the same small bowl, whisk together the melted butter, brown sugar Swerve, and Cinnamon. Spoon onto the top of the cake batter and swirl into the batter.
Step 6
Bake the cinnamon roll cake for 30 to 35 minutes or until it gets properly brown. It may need aluminum foil during the last 10 minutes to keep the top from burning. Top with optional glaze if desired when the cake cools.
