Instructions
Step 1
Peel the red onion and slice it into thin strips, heat oil in a pan and cook the onion over medium heat until it softens, then add balsamic vinegar and 1 tsp sugar, season with salt and pepper, cook until jammy, and remove from the pan.
Step 2
Heat oil in a pan, season the beef with salt and pepper, cook on both sides for 3–4 minutes until medium doneness, then let it rest for 5 minutes and slice into thin strips.
Step 3
Halve the cherry tomatoes and mix them with arugula, olive oil, salt, and pepper.
Step 4
Place the ciabatta in the oven briefly or toast it in a pan until warm and slightly crispy.
Step 5
Spread mayonnaise on the ciabatta and top with sliced beef, tomato–arugula salad, and onion jam, then serve.
