Happy St. Patrick’s Day from your Irish chef. Today we are making Traditional Irish Brown Bread. No yeast. No fuss. Just a few ingredients and a hot oven.
This is the bread you find all over Ireland. Served with thick Irish butter, smoked salmon, or a bowl of soup. Rustic, hearty, and ready in under an hour.
Serve thick slices with salted Irish butter. Perfect with smoked salmon, soup, or jam.

Instructions
Step 1
Heat oven to 425°F.
Step 2
In a bowl mix the whole wheat flour, all purpose flour, baking soda, and salt.
Step 3
Make a well in the center. Pour in most of the buttermilk.
Step 4
Mix with your hand until it just comes together. Add the remaining buttermilk if it feels dry. The dough should be soft but not sticky.
Step 5
Turn onto a lightly floured surface and gently shape into a round loaf about 2 inches thick. Do not knead.
Step 6
Line a baking sheet or cast iron pan with parchment.. Place bread on the baking sheet or cast iron pan and cut a deep cross on top with a knife.
Step 7
Bake 35 to 40 minutes until the crust is firm and the bottom sounds hollow when tapped.
Step 8
Let cool at least 20 minutes before slicing.
