Ingredients
4 servings
1 x 15 ozcan chickpeas
drained, rinsed, and thoroughly dried
1eggplant
medium, cut into 1-inch cubes
1red bell pepper
sliced
1sweet onion
cut into wedges
1 cupmushrooms
cremini or portobello, halved
3 tablespoonsextra-virgin olive oil
1 teaspoonsmoked paprika
1 teaspoonground cumin
½ teaspoondried thyme
or rosemary
½ teaspoonblack pepper
parsley
Optional finish, chopped, or a small crumble of aged cheese, gouda or parmesan

Instructions
Step 1
1. Heat oven to 425°F (220°C).
Step 2
2. Toss vegetables and chickpeas on a large sheet pan with olive oil, smoked paprika, cumin, thyme/rosemary, salt, and pepper. Spread in a single layer—don’t overcrowd.
Step 3
3. Roast for 35–40 minutes, stirring once halfway, until vegetables are deeply caramelized and chickpeas are lightly crisp.
Step 4
Finish with fresh parsley or lemon zest. If desired, add a light sprinkle of aged cheese for extra richness (optional but Malbec‑friendly).
