Fudgy, protein-packed muffins made with pumpkin or sweet potato purée, peanut butter, eggs, vanilla protein powder, and maple syrup. Simple one-bowl batter; bake at 350°F about 20 minutes.

Step 1
Combine everything in a bowl & place into greased muffin tins. We use butter for our pan but you can also use coconut oil.
Step 2
Bake in the oven at 350° for 20 minutes. Check them every 10 minutes! We like ours fudgey & bake for 20 minutes.
