Healthy Banana Muffins

These are the moistiest, flufiest, delicious and the only healthy banana muffin recipe you'll ever need, seriously. This recipe is gluten-free, refined sugar-free and don't requires any fancy or expensive ingredients! Note: I added some walnut crumble before baking them, but it's totally optional (with the crumble the nutricional values aren't the same, obviously)! :)

Instructions

Preheat the oven to 175°C.

Mash the overriped bananas with a fork until fully mashed (they HAVE to be overriped!!!).

In a large bowl, add the mashed bananas, honey, butter, egg, salt, vanilla extract and yogurt and stir well until fully mixed and homogeneous.

Sift in the oat flour, combined with the baking powder, baking soda, cinnamon and nutmeg, and mix with a spatula until just combined (be carefull to not overmix the batter!).

Pour the batter (1-2 scoops each) in a lined muffin pan (i used a silicone muffin pan, so I didn't have to line it).

Put it in the oven for 25 to 35 minutes.
