Fried spaghetti pie the traditional way - in Italy, and in particular in Napoli, this meal is known as "frittata di spaghetti". Originally it was invented to reuse leftover spaghetti (and leftover tomato sauce or meat sauce) on the following day. By frying ti in a pan - together with some eggs - it would be the easiest way to prepare it. However, people noticed that it is not only a method for not throwing away food, but that it is also an extremely delicious dish. And so it has become a very common plate of the cucina italiana. It is typically eaten with fingers, often also used as beach food. Instructions

Step 1
Cut/chop cold spaghetti (if not sauced) set aside. If using uncooked spaghetti, cook the pasta al dente in plenty of water and salt. Then drain it well and let it cool. If using leftover spaghetti that’s been kept in the fridge, bring it to room temp first.
Step 2
chop/cut bacon (or sausage) and cook in pan. drain.
Step 3
Add to bowl, eggs, salt, pepper and shredded parmesan cheese beat until well blended.
Step 4
Large Bowl: Mix spaghetti with (chunked) Mozella cheese. OPTION: Add 1/4 c. spaghetti sauce
Step 5
Add to spaghetti mix, bacon (meat), then egg mix. blend well.
Step 6
Pour Olive Oil in Lg skillet, (heat on Med-High), pour Spaghetti mix in. Cover with clear/glass pan lid. Cook 10-15 min. Can add 1/2 spaghetti, more meat/cheese, then rest of Spaghetti.
Step 7
When a fairly compact crust has formed on the bottom (you can see from the edges and by shaking the pan), cover pan with a plate (or use LID!),

Finally, add al ittle more olive oil to the pan and once it’s hot, slide the frittata back into the pan with the uncooked side underneath. Cook for a few more minutes,until you have a nice golden crust on the other side too.
Step 9
Cook 5-7 more minutes (cheese melted). Slide onto a serving plate. Cut like pizza, serve with bread & simple side salad.
