Ingredients

2boneless skinless chicken thighs
1 Tbspneutral oil
1brown onion
finely chopped
3cloves garlic
minced
1 tspground cumin
1 tspsmoked paprika
½ tspground cinnamon
½ tspdried oregano
2 Tbsptomato paste
1 Tbspchilli mix
mexican
600mlchicken stock
1 Tbspsoy sauce
salt
to taste
0.5juice of lime
100gsweetcorn
1can of black beans
cooked
pickled red onions
fresh coriander
chopped
feta
Crumbled, or grated cheese
lime wedges
tortilla chips
avocado
scoop, smashed
Instructions
Step 1
1. In a pot, heat the oil over medium heat. Add chopped onion and garlic and sauté for 3-4 minutes until softened. Stir in cumin, smoked paprika, chilli mix, cinnamon, oregano, and tomato paste. Cook for another minute
Step 2
2. Add the chicken thighs, chicken stock, and soy sauce. Bring to a gentle simmer. Cover and poach the chicken for around 20 minutes, until cooked and tender
Step 3
3. Remove the thighs, shred with two forks, and return to the pot. Add sweetcorn and black beans. Simmer for another 5-10 mins. Taste and adjust seasoning with salt and lime juice
Step 4
4. Ladle into bowls. Top with pickled red onions, coriander, cheese, avocado, lime, and crunchy tortillas
