Ingredients

1 tablespoonolive oil
1onion
chopped
5cloves garlic
minced
2 tablespoonsground cumin
2 tablespoonschili powder
1 tablespoondried oregano
2 x 15 ouncesfire-roasted tomatoes
cans, do not drain
1 x 10 ouncesfrozen corn
1 x 15 ouncescan black beans
rinsed and drained
4 cupschicken broth
2 cupschicken
cooked, shredded
¼ cupfresh cilantro
chopped
toppings
tortilla chips
sliced jalapenos
avocado
chopped
shredded cheese
cheddar, pepper jack, Monterey Jack
cilantro
fresh chopped
Instructions
Step 1
Heat the olive oil in a large soup pot. Add the onion and cook until soft, about 3 minutes. Add the garlic and cook 30 seconds.
Step 2
Add the cumin, chili powder, oregano, tomatoes, corn, beans, chicken broth, chicken and cilantro. Cook about 10 to 12 minutes. Season with salt and pepper. Serve with desired toppings
