1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large bowl, cream together the butter, brown sugar, and white sugar until light and fluffy.

3. Add 1 egg and 1 tablespoon of lavender syrup, mixing until fully incorporated.

4. Slice the vanilla beans lengthwise and scrape out the paste. Add it to the bowl.

6. In a separate bowl, whisk together the flour, baking soda, baking powder, and a pinch of salt.

7. Gradually add the dry ingredients to the wet mixture. While mixing, slowly add fresh orange juice until a soft, sticky dough forms.

8. Fold in the chocolate chips, remaining lavender syrup, and orange zest until evenly distributed.

9. Scoop spoonfuls of dough onto the prepared baking sheet, spacing them slightly apart. (Makes about 12–24 cookies, depending on size.)

10. Bake for 11–14 minutes, or until the bottoms are lightly golden brown.
