Bring a taste of the tropics to the table with these quick and easy chicken tacos. Packed with flavour and finished with a fruity pineapple mayo drizzle they're a fun, handheld meal the whole family wil love.

Step 1
Heat oil in a frypan on medium-high.
Pat chicken dry and season with salt and pepper,
Cook chicken for 5-6 mins. until browned.
Meanwhile, drain pineapple chunks and reserve juice. Make huli huli sauce by mixing BBQ sauce, Pineapple Juice (reserved) and garlic and ginger. Add pineapple and huli huli sauce to pan,
Cook for another 2-3 mins, until cooked through and sticky.
Step 2
Add reserved pineapple juice (1 Tbsp) to a bowl along with mayo and vinegar,
Mix to combine
Season to taste with salt and pepper
Step 3
Place stack of tortillas on a plate and microwave for about 1 min to warm.
Thinly slice spring onion.
Step 4
Drizzle with pineapple mayo and sprinkles with spring onions.
