Instructions
Step 1
Halve, peel, and finely dice onion. Finely chop cilantro
Step 2
Heat a drizzle of olive oil in a large pan over medium-high heat.

Add onion and a pinch of salt. Cook, stirring occasionally until slightly softened and lightly browned, 2-3 minutes
Step 4
Add pork and taco seasoning. Cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes
Step 5
While pork cooks, in a large bowl, combine cabbage, mayonnaise, half the cilantro, vinegar, sugar, salt, and pepper
Step 6
Season pork mixture with salt and pepper
Step 7
Remove pan from heat
Step 8
Wrap tortillas in damp paper towels and microwave until warm, 30 seconds
Step 9
Divide tortillas between plates and fill them with pork filling, cheese, slaw, sour cream, and remaining cilantro
