Step 1
Cut the lamb into small chunks and the vegetables into small pieces. Lightly coat the lamb with flour.
Step 2
Heat olive oil in a pan and brown the lamb for a few minutes, then remove it and set aside.
Step 3
In the same pan, add the carrot, celery, and onion and cook for a few minutes until slightly softened. Return the lamb to the pan, lower the heat, and add the tomato sauce, keeping it relatively thick and not too liquid.
Step 4
Let it cook gently until the meat is tender and the sauce is reduced.
Step 5
Cook the pasta in salted boiling water until al dente, then drain and combine with the ragù.
