Instructions
Step 1
1. Prep the Seeds: Quickly toast the pumpkin seeds in a dry pan for 2 minutes until they just start to pop. This releases the oils and gives them that restaurant-quality flavor.

2. Shred: Aim for a "medium" shred. So the cabbage pieces are long and distinct, not finely minced.
Step 3
3. The "Light" Toss: Mix the cabbage, carrots, and dressing just before serving. You want the vegetables to stay rigid and "high" on the plate, not wilted.
Step 4
4. Finish: Pile the slaw next to the schnitzel and generously scatter the toasted pumpkin seeds and bias-cut spring onions over the top.
