Instructions

Step 1
Start by preparing the zoodles. Use a spiralizer to create noodle-shaped zucchini. This adds a fun texture and is a great low-carb alternative to pasta. Set the zoodles aside once done.

In a bowl, mix honey and the juice of one lemon. This sweet and tangy glaze will add flavor to the chicken. Set it aside to let the ingredients meld together.

Heat a non-stick skillet over medium heat, and add minced garlic. Sauté it until fragrant, about 1 minute. This step infuses the oil with garlic flavor.

Add the chicken breast to the skillet and cook until golden brown on each side, about 5–7 minutes per side. Ensure the chicken is cooked through, reaching an internal temperature of 165°F.
Step 5
Pour the honey-lemon glaze over the chicken, allowing it to simmer. This will create a delicious coating. Cook for an additional 2–3 minutes until the glaze thickens slightly.

Finally, add the zoodles to the skillet and toss them in the glaze for a minute or two. They should be warm and slightly tender. Serve hot, garnished with extra lemon if desired for freshness.
