peeled & deveined
2 Tbspolive oil
3 clovesgarlic
finely chopped
1onion
small 2 shallots, finely diced
½ tspchili flakes
adjust to taste
1 x 400gcan chopped tomatoes
2 Tbsptomato paste
for depth
60mldry white wine
optional but excellent

Instructions
Step 1
Build the base

Heat olive oil in a pan over medium heat. Add onion and cook 3–4 minutes until soft. Stir in garlic and chili flakes for 30 seconds (don’t burn the garlic).

2. Deglaze & deepen flavor

Pour in white wine (if using), let it reduce for 1–2 minutes.

3. Make the sauce

Add chopped tomatoes + tomato paste. Season with salt, pepper, and a tiny pinch of sugar.

Simmer gently for 10–12 minutes until slightly thickened.

4. Cook the shrimp

Add shrimp directly into the sauce. Cook 2–3 minutes, turning once, until pink and just cooked through.

5. Finish like a pro

Turn off heat. Add lemon juice and fresh herbs. Taste and adjust seasoning.

• Toss in spinach or cherry tomatoes for a fresher, lighter feel • Finish with a drizzle of good olive oil and extra herbs for a more refined presentation
