1 cup Brown Rice Flour (or blend of white rice flour + tapioca)
1/4 cup Oat flour or extra rice flour (for structure)
1/2 tsp Baking soda
1/4 tsp Salt
1/2 cup Runny Almond Butter or Coconut Oil (melted)
1/2 cup Maple syrup
1 tsp Vanilla extract
1/2 cup Vegan chocolate chips Instructions
Preheat & Prep: Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper.
Mix Dry: In a large bowl, whisk together the rice flour, baking soda, and salt.
Mix Wet: In a separate bowl, whisk the almond butter (or coconut oil), maple syrup, and vanilla until smooth.
Combine: Pour the wet ingredients into the dry ingredients and stir until a thick dough forms. Fold in the chocolate chips.
Shape & Bake: Scoop 2 tablespoons of dough per cookie onto the baking sheet. Flatten slightly with your fingers or a spoon.
Bake: Bake for 10-12 minutes until the edges are golden brown.
