Instructions

Step 1
Season the pork with salt, black pepper, cumin, smoked paprika, and oregano.
Step 2
Select Sauté mode on the Instant Pot with the lid open.
Step 3
Brown the pork pieces for 2–3 minutes per side, then remove briefly from the pot.
Step 4
Add the onion and garlic to the pot and cook for 1–2 minutes.
Step 5
Add the stock, apple cider vinegar, and optional lime juice and orange juice.
Step 6
Return the pork to the pot.
Step 7
If using orange halves, place them into the pot around the pork.
Step 8
Close the lid.
Step 9
Select Slow Cook mode on LOW and cook for 7–8 hours. Alternatively, cook on HIGH for 4–5 hours.
Step 10
Alternatively, cook on HIGH for 4–5 hours.
Step 11
Once the pork is tender, remove it from the pot and shred it using two forks.
Step 12
Return the shredded pork to the cooking juices and mix well.
Step 13
Optional: crisp the shredded pork in a hot pan for 5–10 minutes before serving for carnitas-style texture.
