To cook this casserole follow these simple steps. The secret lies in even baking and good marinating. Preparation Method: 1. Prepare the vegetables: Preheat the oven to 200°C. *Peel the potatoes and cut into cubes about 2 cm. Divide the cauliflower into small florets and cut the red onion into slightly thick slices. Place all the vegetables in a large bowl. Add olive oil, salt, pepper, minced garlic and oregano. Mix well by hand so that each piece is coated with spices. 2. Layer in the pan: Cover a baking pan with baking paper (as in the photo). Spread the vegetables in the pan in a single layer. Do not overcrowd them, so that they cook and do not boil. Put in the oven for about **20-25 minutes** initially, as potatoes and cauliflower take longer than fish. 3. Add the sardines:** While the vegetables are cooking, clean the sardines (remove the head and entrails). Dry them well with kitchen paper and season them with a little salt and olive oil. Remove the pan from the oven, stir the vegetables a little and arrange the sardines on top. Put back in the oven for another **15-20 minutes**, until the sardines are golden brown and the potatoes are completely soft. 4. The final touch: As soon as you take it out of the oven, sprinkle it immediately with **fresh parsley**, finely chopped. * Squeeze a little lemon juice on top to give the fish a freshness. ### A "pro" tip: If you like your cauliflower a little crunchier, you can turn on the **"grill"** function of the oven for the last 5 minutes.
