Garlic Herb Chicken with Roasted Petite Gold Potatoes & Zucchini

Instructions

Step 1
Preheat oven to 425°F.
Step 2
Toss potatoes with: 1 tbsp olive oil 1 tsp garlic powder 1 tsp Italian seasoning 1/2 tsp paprika salt & pepper Spread on a large sheet pan and roast for 15 minutes.
Step 3
Meanwhile, season chicken breasts with: remaining olive oil remaining seasonings salt & pepper Toss zucchini with a light spray or drizzle of olive oil plus salt & pepper.
Step 4
After potatoes roast: push potatoes to one side add chicken breasts add zucchini Roast another 18–22 minutes, until chicken reaches 165°F.
Step 5
Optional: sprinkle a little parmesan on vegetables during the last 2 minutes.
