Instructions

Step 1
Prepare the onion, jalapeno, parsley, cilantro and garlic. Using a cheesecloth, squeeze out the excess liquid. Mix all ingredients in a large bowl along with the meat
Step 2
Cut the Pita's in half and stuff them with ground meat mixture. In a hot pan with a little oil, sear the meat on the ends of the pita and set aside
Step 3
Lay seared pita's flat on a wire rack on a sheet tray and bake in a 400 degree oven for 15 minutes. The wire rack is used so juices drip into the pan and don't make the pita soggy.
Step 4
Serve with a side of yogurt tahini sauce for dipping and a squeeze of lemon juice
