Vegetable Pitas with Everything-Spiced Hummus

These veggie pitas feature an everything-bagel-style spice mix stirred into hummus and sprinkled on sautéed zucchini, red onion, bell pepper, and butternut squash over toasted pita rounds.

Ingredients
4 servings
2 tspsesame seeds
1 tsppoppy seeds
½ tspcaraway seeds
1 tsponion
dried, minced
1 tspdried minced garlic
1 cuphummus
purchased
1zucchini
medium, quartered lengthwise and cut into 1/2-inch-thick slices
1 cupred onion
chopped
½ cupred bell pepper
chopped
2 cupsbutternut squash
chopped cooked
4whole grain pita bread
rounds, toasted
coarse sea salt
fresh thyme
optional
Instructions
Step 1
In a large skillet combine sesame seeds, poppy seeds, and caraway seeds. Cook over medium 1 minute or until sesame seeds are toasted, stirring frequently. Pour into a small bowl; let cool. Stir in dried onion and garlic. Reserve 2 tsp. of the spice mixture. Stir remaining spice mixture into hummus.
Step 2
In a large skillet cook zucchini, red onion, and bell pepper over medium 4 minutes, stirring occasionally and adding water, 1 to 2 Tbsp. at a time, as needed to prevent sticking. Add butternut squash and 1 tsp. of the reserved spice mixture. Cook 2 to 3 minutes more or until squash is hot, adding water as needed.
Step 3
Spread hummus over pita rounds. Top with vegetables and sprinkle with remaining 1 tsp. spice mixture and salt to taste. If desired, garnish with fresh thyme.
