Instructions

Step 1
1. Pan-Caramelize the Broccoli

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Place the broccoli florets in a single layer, flat-side down [per previous instructions]. Cook undisturbed for 3–4 minutes until deeply browned. Add 3 tablespoons of water, cover immediately, and steam for 2–3 minutes [per previous instructions]. Remove the lid, toss with 2 cloves of minced garlic for 1 minute, then transfer the broccoli to a plate and cover with foil.

2. Sear the 3 Tilapia Fillets

Wipe the skillet clean. Add 1 tablespoon of olive oil over medium-high heat. Season the fillets with salt, pepper, and a pinch of paprika. Sear the fillets for 3–4 minutes per side until golden and opaque. Transfer the fish to the plate with the broccoli. [1, 2]

3. Make the Extra Lemon Caper Butter Sauce

In the same hot skillet, pour in the chicken broth or wine to deglaze, scraping up the flavorful browned bits. Stir in the 4 remaining cloves of minced garlic, the capers, and the lemon juice. Let the liquid simmer and reduce by about half (roughly 3–5 minutes). [1, 2, 3, 4]

Turn the heat to low. Whisk in the 4 tablespoons of cold butter, one small piece at a time, until the sauce becomes silky and slightly thickened. Stir in the fresh parsley. [1, 2]

Return the fish and broccoli to the pan briefly to coat them in the sauce, or simply plate them and pour the sauce generously over the top.
