Step 1
You can either prep this in 6 meal prep containers or a 9x13 casserole dish
Step 2
First turn the oven on 350. Then cook the 1 cup of rice with the cup of bone broth and follow the package instructions for your rice. At the same time steam your cauliflower rice and one both are complete combine them
Step 3
quarter the cherry tomatoes and combine with the rice and cooked diced chicken, Greek Yogurt, pesto, and seasonings
Step 4
Top with Mozzarella cheese and bake in the oven at 350 until the cheese is melted and bubbly (about 20 minutes)
