For the dip base
8 ozfeta cheese
not pre-crumbled
4 ozcream cheese
2 Tbspextra virgin olive oil
1 Tbspfresh lemon juice
1garlic clove
For the Antipasti Topping (or use jarred muffuletta and add items as desired, eg dates, nuts, olives...)
Instructions
Step 1
Whip the Cheese: Place the feta, softened cream cheese, olive oil, lemon juice, and garlic into a food processor. Pulse until the mixture is completely smooth and creamy.
Step 2
Plate It: Spread the whipped cheese mixture into a shallow serving bowl or directly onto a platter. Create a shallow divot or well in the center for the topping.
Step 3
Mix the Antipasti: In a separate bowl, toss together the diced olives, artichokes, and roasted red peppers. Spoon this mixture right onto the center of your whipped feta.
Step 4
Garnish & Serve: Drizzle everything with hot honey and a little bit of the oil reserved from the antipasti jars. Serve immediately
