The Potatoes: Cut them into thin matchsticks (like shoestring fries) or very small, thin cubes. The smaller they are, the faster they will cook and crisp up.

Crisp the Potatoes First: Heat a tablespoon of regular cooking oil (or a tiny splash of sesame oil mixed with regular oil) in your pan. Add the potato pieces. Cook them, stirring frequently, until they are golden-brown and just tender (about 5–7 minutes). Remove them from the pan and set them aside.

Sear the Steak: Turn the heat up to high. Add another splash of oil if the pan is dry. Add the steak slices in a single layer. Let them sear for about 1 minute without moving them to get a nice crust, then flip and cook for 1 more minute until just browned. Remove the steak and set it aside with the potatoes.

Cook the Veggies (Celery & Onions): Toss your pearl onions and all that celery into the hot pan. Stir-fry them rapidly for about 2–3 minutes. You want the onions to soften slightly and the celery to turn bright green while keeping its crunch.

Combine and Sauce: Turn the heat down to medium. Dump the potatoes and steak back into the pan with the veggies. Give your sauce mix a quick stir and pour it directly over everything.

The Final Toss: Stir-fry everything together for about 1 to 2 minutes. The honey and soy sauce will bubble up and reduce into a glossy, savory glaze that coats the beef and veggies.
