Instructions

Step 1
Combine the steel cut oats and water in the bowl of your pressure cooker and stir.
Step 2
Add the cinnamon sticks, cover, and cook 6 minutes on high pressure.
Step 3
Allow the pressure to naturally release.
Step 4
Remove the cinnamon sticks and discard.
Step 5
Stir the oats well. Then add the blueberries.
Step 6
Add the egg whites slowly: With the oats still hot, stir constantly while slowly pouring in the egg whites. Keep stirring for 2–3 minutes, until the egg whites are fully incorporated and the oats look creamy.
Step 7
If the oats seem too thick, stir in a splash of milk or water.
Step 8
To serve, pour about 1 cup of oats into each bowl. Top each serving with 2 tablespoons milk, 1/2 sliced banana, 1 teaspoon honey or maple syrup, and a pinch of cinnamon.
Step 9
Leftovers can be refrigerated in glass or plastic containers. To reheat, microwave 2–3 minutes, stirring halfway through. Add toppings after reheating.
