Instructions
Step 1
Mix:* Vital wheat gluten* Whey isolate* Bread flour* Resistant starch* Baking powder* Salt

Add:* Sourdough discard* Greek yogurt

Mix until a shaggy dough forms.
Step 4
Add water 1 tablespoon at a time if needed. The dough should be firm but pliable.
Step 5
Knead for 5–7 minutes.
Step 6
Because of the high gluten content, the dough will become smooth and elastic fairly quickly.
Step 7
Cover and let rest 15–20 minutes.
Step 8
Divide into 4 equal pieces (about 100g each).
Step 9
Roll into ropes and join the ends, or poke a hole through the center and stretch.

Bring water and baking soda to a gentle boil.
Step 11
Boil each bagel:* 30 seconds on the first side* 30 seconds on the second side

Remove to a parchment-lined baking sheet.
Step 13
Sprinkle on toppings.
Step 14
Bake at 375°F (190°C) for 22–26 minutes.
