Instructions
Step 1
1. Combine milk, sourdough starter, honey, water, 1 egg, and butter. Mix until frothy.
Step 2
2. Add flour and salt. Mix on low with a dough hook for 10 minutes. Dough should be soft and slightly tacky.
Step 3
3. Place dough into a greased bowl and cover. Bulk ferment for 3 hours at 80°F.
Step 4
4. Shape into 8–10 buns. Place on a parchment-lined baking sheet. Cover and let rise for 1 more hour at 80°F.
Step 5
5a. For Pretzel Bun Version: Add 150g (about ½ cup) baking soda to a pot of boiling water. Boil buns for 30 seconds on each side. Transfer back to the baking sheet. Brush with egg wash, score 3 shallow lines, and sprinkle with coarse salt.
Step 6
5b. Regular Buns: Brush buns with egg wash (1 egg + a splash of water).
Step 7
1. Bake at 400°F for 15 minutes, or until golden brown. Enjoy!!
