Instructions

Step 1
Roast beets. Preheat your oven to 400 degrees. Scrub beets, trim leaving 1 inch of stem, rub with olive oil and wrap tightly in aluminum foil. Place on a baking sheet and roast for 45 to 60 minutes until fork tender. Let beets cool slightly and rub skin off. Slice into wedges or bit sized cubes. Make dressing. Whisk olive oil, vinegar, honey, Dijon mustard,salt and pepper. Toss salad greens with half of dressing. Plate greens, then top with roasted beets, crumbled cheese, and nuts. Drizzle remaining dressing and serve immediately. Can add protein, grilled chicken or hard boiled eggs, etc.
