Instructions
Step 1
Cook the quinoa or brown rice according to packet instructions and let cool.
Step 2
Toss the sliced courgettes, peppers, and red onion in olive oil, then roast at 200°C for 20 minutes.
Step 3
Divide the cooked grains evenly across 4 meal-prep lunchboxes.
Step 4
Layer the roasted Mediterranean vegetables and your chosen protein on top of the grains.
Step 5
Seal and store in the fridge; add your separate dressing just before eating at your desk.
