Ingredients

400gchicken breasts
½ tablespoonextra-virgin olive oil
2 clovesgarlic
peeled and crushed
1 tablespoondried oregano
350gorzo
2peppers
any colour finally chopped
0.5red onion
finally chopped
0.5cucumber
deseeded and finally chopped
125gcherry tomatoes
halved
120gchickpeas
drained and rinse
salt
black pepper
For the creamy dressing
Instructions
Step 1
I. Preheat the oven to 190°C (170°C fan/375°F/Gas 5).
Step 2
2. Put the chicken breasts into a baking dish with the olive oil, garlic, oregano and some salt and pepper. Stir to coat, then bake in the oven for 20-25 minutes. Alternatively, cook in an air fryer at 200°C for 15-20 mins
Step 3
3. Meanwhile, bring a large saucepan of salted water to the boil and cook the orzo until al dente, then drain and rinse under cold water.
Step 4
4. Combine all the creamy dressing ingredients in a bowl and mix well.
Step 5
5. Once cooked, cut or shred the chicken into small pieces, then transfer to a large bowl with the pasta, remaining ingredients and the dressing. Toss well to combine.
Step 6
6. Transfer to airtight containers and store in the fridge for 3-4 days.
