Absolutely! I actually think this is a recipe you'll use all the time. It goes with shrimp, salmon, chicken, steak, or even as a healthy lunch on its own. Warm Lemon Herb Quinoa & Cannellini Bean Salad Prep Time: 10 minutes Cook Time: 20 minutes (or 5 minutes if quinoa is already cooked) Servings: 8 (~1cup each Ingredients 2 cups dry quinoa, rinsed 4 cups low-sodium chicken broth (or water) 2 (15 oz) cans cannellini beans, rinsed and drained 3 tbsp extra virgin olive oil Juice of 2 lemons Zest of 1 lemon 2 cloves garlic, finely minced (or 1 tsp garlic powder) ½ cup chopped fresh parsley 1 tsp dried oregano ½ tsp kosher salt (or to taste) ½ tsp black pepper Optional additions (depending on the meal) 1 cup halved cherry tomatoes ½ cup diced cucumber (best if serving cold or room temperature) ¼ cup crumbled feta 2 tbsp chopped fresh dill or basil --- Instructions 1. Cook the quinoa Rinse the quinoa thoroughly. Cook in your rice cooker with: 2 cups quinoa 4 cups chicken broth When finished, fluff with a fork and let it sit for about 5 minutes. 2. Make the dressing In a large bowl, whisk together: Olive oil Lemon juice Lemon zest Garlic Oregano Salt Pepper 3. Assemble While the quinoa is still warm, add it to the bowl with the dressing. Fold in: Cannellini beans Parsley If using tomatoes, feta, or herbs, stir them in now.
