Instructions

Step 1
Prep the boats: Cut the cucumbers in half lengthwise. Take a metal spoon and scrape out the wet center seeds to create a hollowed-out ditch.
Step 2
Dry the boats: Place the cucumbers upside down on a paper towel for 5 to 10 minutes to drain off excess moisture. This is especially important for cottage cheese so the filling doesn't get runny!
Step 3
Season the cheese: In a small bowl, stir together the cottage cheese, garlic powder, onion powder, freeze-dried chives, salt, and black pepper until well combined.
Step 4
Fold in the bacon: Stir 3 tablespoons of the crispy bacon bits directly into the seasoned cottage cheese.
Step 5
Stuff and finish: Spoon the mixture evenly into the cucumber boats. Sprinkle the remaining 1 tablespoon of bacon bits over the top right before serving so they stay perfectly crunchy. Eat cold with a fork or slice into thick wheels.
