Red Sauce
Instructions
Step 1
Preheat oven 400°f
Step 2
Drizzle olive oil over an oven, safe pan, sprinkle sea salt. Place sliced onion and tomato in one layer.
Step 3
Rinse and drain rice then add pan in an even layer. Place chicken thighs on top.
Step 4
Mix all the red sauce ingredients in a bowl, then pour over the top of the chicken.
Step 5
Cover with a wet piece of parchment paper, then cover the pan with foil and place in the oven for 1 hour.
Step 6
Remove foil and parchment paper and broil for 5 to 6 minutes or until golden brown on top.
