Instructions

Step 1
Prep & Temp: Take the pork out of the fridge 30 minutes before cooking to bring it to room temperature. Preheat your oven to 190°C (375°F).
Step 2
Make the Rub: In a small bowl, mix the garlic, rosemary, thyme, olive oil, Dijon mustard, salt, and pepper into a paste. Rub it evenly over the entire roast.
Step 3
Sear (Optional but recommended): Heat a splash of oil in an oven-safe skillet over medium-high heat. Sear the pork for 2–3 minutes per side until a golden crust forms.
Step 4
Roast: Place the pork fat-side up in the skillet (or transfer to a baking dish). Roast for 50 to 60 minutes.
Step 5
​Check the Temp: Use a meat thermometer inserted into the thickest part. Pull the roast out when it registers 63°C (145°F).
Step 6
Rest: Transfer to a cutting board, tent loosely with foil, and let it rest for 10 minutes before slicing. This locks in the juices.
