Sausage and Shrimp Dirty Rice with Broccoli

Making this all in one pot is the way to go. The rice absorbs all the rich, smoky flavors from the sausage, the shrimp stays perfectly tender, and the broccoli gets beautifully steamed right at the end.

Ingredients
6 servings
1 lbshrimp
peeled and deveined
14 ozsmoked sausage
or andouille, sliced into rounds
1 headbroccoli
Cut into small, bite-sized florets
1 cuplong-grain white rice
Rinsed well to remove excess starch
1onion
small, diced
1bell pepper
diced
2celery ribs
diced
3 clovesgarlic
minced
2 cupschicken broth
2 Tbspcajun seasoning
Adjust based on how much heat you like

Instructions
Step 1
Sear the proteins 5-7 mins
Heat olive oil in a large deep skillet or Dutch oven over medium-high heat. Toss in the shrimp with a pinch of Cajun seasoning, cook for about 2 minutes until just pink, then remove them and set aside. In the same pan, brown the sausage slices for 3-4 minutes until crisp. Remove and set aside with the shrimp.
Step 2
Sauté the aromatics 5 mins.
Turn the heat down to medium. Leave the rendered sausage fat in the pan and toss in your diced onion, bell pepper, and celery. Cook until soft, scraping up all those flavorful browned bits from the bottom of the pan. Stir in the minced garlic for the last 60 seconds.
Step 3
Toast the rice & simmer 20 mins.
Add the rinsed white rice and the rest of your Cajun seasoning to the pan, stirring for 1 minute to toast the grains. Pour in the chicken broth, bring it to a boil, then cover with a tight lid. Turn the heat down to low and let it simmer undisturbed for 15 minutes.
Step 4
Steam the broccoli & finish 5 mins.
Quickly lift the lid, scatter the small broccoli florets right on top of the rice, and immediately put the lid back on. Let it steam on low for 5 minutes until the broccoli is bright green and the rice is tender.
Step 5
Combine and serve 1 min.
Remove the pot from the heat. Fold the cooked shrimp and sausage back into the rice, fluffing everything together with a fork. Let it sit covered for 2 minutes to warm the proteins back through, then dive in!
Step 6
Cut your broccoli florets quite small. Because they only steam on top of the rice for about 5 minutes, smaller pieces ensure they turn perfectly crisp-tender without making the rice underneath soggy.
