1 Tbspolive oil
2 tspgarlic powder
2 tspitalian seasoning
1 tspsmoked paprika
1 tspblack pepper
1 tspsalt
Spinach Artichoke Bean Base
2 x 15 ozcannellini beans
cans, drained and rinsed
1 Tbspbutter
or olive oil
1onion
medium, finely chopped
5 clovesgarlic
minced
10 ozartichoke hearts
drained and chopped
2 cupschicken bone broth
or chicken broth
4 cupgrated Parmesan
5 cupsspinach
fresh
0.5juice of lemon
½ cupfresh basil
or parsley, chopped
black pepper
to taste
red pepper flakes

Instructions
Chicken and Beans
Step 1
1. Cook the chicken Heat olive oil in a large skillet over medium-high heat. Season chicken with garlic powder, Italian seasoning, paprika, salt, and pepper. Cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
Step 2
2. Build the creamy bean base In the same skillet, add butter or olive oil. Cook onion for 5 minutes until softened. Add garlic and cook another 1-2 minutes until fragrant. Add: cannellini beans chicken bone broth artichokes Parmesan black pepper Mash about 1½ of the beans with a potato masher or spoon. This gives the creamy texture without needing heavy cream. Simmer gently for 10-15 minutes. Don't boil.
Step 3
3. Finish Lower heat and stir in spinach until wilted. Add lemon juice and fresh herbs. Mix chicken back into the skillet.
Step 4
Roast: 425°F for 30-40 minutes Flip/shake halfway Cook until crispy outside and fork tender
