Instructions

Prepare the ribs

Pat the ribs dry with paper towels.

Rub them with the olive oil.

Mix all the dry rub ingredients and coat the ribs generously on both sides.

Let them sit for 30 minutes (or refrigerate overnight for even more flavor).

Set up the grill

Preheat your Weber Genesis E-435.

Turn on the outside burners only (or one side of the grill) and leave the center burners off.

Aim for a grill temperature of 275–300°F.

You’ll be cooking over indirect heat.

Wrap in foil

Wrap each rack tightly in heavy-duty aluminum foil, sealing all the edges so steam stays inside.

Place the foil-wrapped ribs on the side of the grill with no direct flame underneath.

Close the lid.

Cook for 2½–3 hours.

Carefully open the foil (watch out for hot steam).

Brush with BBQ sauce if using.

Move the ribs over direct medium-high heat for 3–5 minutes per side until the sauce is caramelized and lightly charred.

How to Tell They’re Done

The ribs are ready when:

The meat has pulled back from the ends of the bones by about ¼–½ inch.

A fork or knife slides into the meat with very little resistance.

If you lift the rack with tongs, it bends easily without falling apart.

This recipe works very well ahead of time:

Grill the ribs through the 2½–3 hour foil stage.

Cool and refrigerate.

Before serving, reheat the foil-wrapped ribs on a 275°F grill (or in a 275°F oven) for about 20–30 minutes.

Unwrap, brush with BBQ sauce, and finish over direct heat for a few minutes to caramelize.
